This is a favorite at our Smoky Mountains inn. Wow your friends and family with it at home.
Filet Mignon with Marsala Peppercorn Sauce
1 T olive oil
4 6oz beef filets
Sea Salt
1 T black peppercorns
2 tsp green peppercorns
2 T fresh rosemary
2 shallots, thinly sliced
_ cup Marsala wine
1 T balsamic vinegar
2 T unsalted butter, cut in pieces
Rub 1 Tb of olive oil on both sides of steaks and season with salt. Crush peppercorns with spice grinder. Pulse a few times but leave them coarse. Press mixture on steaks.
Heat a large skillet over medium heat until hot. Place steaks in the skillet 5-6 minutes per side; turn only once. Cook until desired doneness.
Heat remaining olive oil over medium heat in the skillet in which you cooked the steaks. Add the shallots and sauté for 2-3 minutes. Add marsala, vinegar, peppercorns, and simmer 2 minutes until the liquid has reduced by half. Remove from heat and whisk in butter.
Spoon over steaks.
